This week from our farm to your table.

Chicken:

Hey all … looks like a beautiful start to the week … we will have chickens in the barely 4 lb range … whole .. spatchcocked … EQ brined or not ….

 

Duck:

Nice big breasts or legs …  rendered Duck fat

 

Pork:

look for posts on American Guinea Hog coming soon.

 

Sausage:

Fresh batch of Summer Pesto pork sausage … with fresh basil mulled with walnut oil , organic garlic scapes, and piave cheese.  double ground  for a nice tight texture ….. mmmmmmmm   really good.

 

Mushrooms:

both oyster and shiitake .. right from our basement fruiting room !!!

 

Salad:

Cold Roasted corn and duck salad in a light vinaigrette.
